Yee Shang, salad ikan

Masakan negeri Tiongkok yang kerap dihubungkan dengan tradisi Imlek adalah Yee Shang (atau Yusheng) salad. Bermacam nama yang diberikan, ada Lou Hei Yee Sang , ada pula Fa Ca Yee Shang .Racikan salad ini terdiri dari irisan halus wortel, lobak, manisan pepaya, jahe merah, jahe putih, kacang tanah, wijen, potongan wonton goreng, irisan jeruk dan diberi topping irisan fillet salmon. Ikan salmon melambangkan kehidupan dan kemakmuran.

Bahan-bahan ini memiliki beragam rasa dan tekstur yang mewakili lambang kehidupan. Manis, asin, pahit dan gurih serta renyah. Sirop plum dan minyak ditambahkan sebagai lambang harapan kelancaran dan hidup yang lebih enak di tahun mendatang.

Pemakaian aneka bumbu, juga punya makna tersendiri. ‘Jahe merah, jahe putih, bawang putih dan bawang merah bisa mencegah penyakit jantung, tekanan darah tinggi, meningkatkan kekebalan tubuh dan kanker, sehingga bisa memperpanjang usia.

Hal yang sudah diyakini selama 6 dasawarsa (sejak lou hei yee sang disajikan di era 60-an). ini beberapa arti yang terkandung dalam salad Yee Shang:

Ikan 年年有餘 (nián nián yǒu yú) ikan selalu berenang dalam air yang berlimpah, melambangkan senantiasa dalam keadaan berlimpah
Wortel 鸿运当头 (hóng yùn dāng tóu) menyiratkan warna merah, berharap keberuntungan menyertai
Green radish 青春常驻 (qīng chūn cháng zhù) May you be youthful and vital always
White radish 风生水起 (fēng shēng shuǐ qǐ) May your success roar like the wind and waves
Pamelo / Lime 大吉大利 (dà jí dà lì) Wish you good luck and good profits
Pepper 招财进宝 (zhāo cái jìn bǎo) Attract wealth and receive treasures
Chinese 5-spice powder 五福臨門 (wǔ fú lín mén) May all good fortune be upon you and your family

Kisah di balik kuliner Yee Sang
Menurut legenda Tiongkok, Dewi Nu Wa menghabiskan enam hari menciptakan hewan dari lumpur, dan pada hari ke tujuh ia menciptakan manusia.

Ren Ri, the Day of Humankind, is correspondingly celebrated on the seventh day of Chinese New Year. To celebrate this day, the Chinese enjoy a special dish comprising seven symbolic delicacies which we know as Yee Sang.

Tatkala Yee Sang disantap, the ritual is to toss the mixed ingredients high in the air wdengan pekik teriakan “Loh Hey” yang artinya ‘terus naik’. It is symbolic of the wish for our fortunes to rise and expand during the forthcoming year.

Yee Sang, Lambang kemakmuran

Dalam merayakan tahun baru Tionghoa, numerous dishes from different origins are savoured. Yee Sang is one such traditional dish. It is symbolic of good luck, prosperity, health and all things auspicious.

Yee Sang comprises thin slices of pickled vegetables and other ingredients which are mixed together thoroughly when the dish is eaten. The taste of the dish is enhanced by its special sauce which imparts a distinctive flavour.

The popular custom is for all round the dining table to toss the ingredients high in the air with joyful exclamations of “Loh Hey” (toss high). The significance of the tossing is to wish for abundant luck and happiness for all. The enjoyment of Yee Sang during Chinese New Year is an age-old custom steeped in ancient tradition and culture.
